Bruce's Confetti Pupcakes
Recipe
Makes 8 pupcakes
1 cup flour
1 tsp baking powder
1/4 tsp baking soda
1/3 cup plain yogurt
2 tbsp vegetable oil
2 tbsp honey
1 large egg
1/3 cup grated carrot
1/2 cup grated cheddar cheese
1/4 cup bell peppers ( mix red & green )
Preheat oven to 350 degrees F. Line muffin tins with 8 cupcake liners. In a large bowl combine flour, baking powder, and baking soda. In a small bowl, blend together yogurt, oil, honey, and egg, then stir in carrot, cheese, and bell peppers. Add the wet mixture to the flour and stir until mixed.
Spoon the batter into the cupcake liners, filling each cup about 3/4 full of the batter. Bake in oven for about 15-20 minutes ( you can check the pupcakes by inserting a toothpick into the center of the cake, if it comes out clean they are done). Let pupcakes cool in tin for 5 minutes and then remove and set aside till it's time to decorate.
Honey Peanut Butter Frosting
1/2 cup of cream cheese ( half a package )
2 tbsp peanut butter
2 tbsp honey

Posted by UnknownScotty and I got to take a little weekend getaway to Massanutten,Va! We visited Massanutten once before for Scotty's birthday a couple of years ago, so we were excited to go back!
Here are some snapshots of our little weekend getaway to Massanutten, VA!
We always have to make a pitstop at Tamarack! It's a great place to stop walk around, look at some local arts and crafts, and get some good food!!
Friday night we headed to old downtown Harrisonburg, VA for dinner at Billy Jacks Wing & Draft Shack. The food was amazing, but the dessert was my favorite part! We each tryed one of their donuts, Scotty had the The Muddy Pig (Nutella with bacon crumbles) and I had The Dirty Duo (chocolate frosting with crushed Oreos) they were heavenly! We ended our night with a movie and a fire.
Saturday was spent exploring downtown Harrisonburg, eating more good food, and enjoying some local brews and connect four at Three Notch'd Brewing Co.
